Oat Cookies

These are great for an afternoon snack with a cup of tea or for a quick breakfast before you run!

Ingredients
* 100g rolled oats
* 50g bran flakes, crushed
* 90g desiccated coconut
* 185g plain flour
* Pinch of salt
* 100g castor sugar
* 40g light brown sugar
* 100g raisins
* 160g butter
* 60g honey
* 45ml water
* 1 teaspoon bicarbonate of soda

Method
1. Preheat the oven to 170ยบ C.
2. Line a baking trays with parchment paper.
3. In a large bowl, combine the rolled oats, bran flakes, coconut, flour, sugars and raisins.
4. Heat the butter, honey and water in a small saucepan.
5. Once the butter starts bubbling, add the bicarbonate of soda and stir briskly.
6. Pour the honey butter over the dry ingredients and mix to combine.
7. Roll the mixture into golfball sized balls and place onto baking sheets. Make sure there is a bit of space between the balls as they will spread in the oven.
8. Bake for about 20 minutes until golden. Cool for several minutes on the tray before transferring to a wire rack to cool completely.
