This LMP is so easy to make and super delicious…you can probably halve the recipe below as it does make A LOT!

Ingredients
Base:
200g digestive
80g melted butter
Filling:
2 cans of condensed milk
250ml lemon juice
Zest of three lemon
6 eggs yolks
Meringue:
26g caster sugar
Pinch of salt
6 egg whites
Method
1. Preheat the oven to 150Β°C.
Base:
2. Put the biscuits in a plastic bag and bash with a rolling pin until they become crumbs.
3. Add in the melted butter and mix until everything is combined.
4. Push the biscuit base into your dish and use the back of a spoon to even it out.Β Place in the fridge to firm up.
Lemon filling:
5. Mix the condensed milk, lemon juice, zest and the egg yolks then set aside.
Meringue:
6. In a clean, dry bowl whisk the egg whites and pinch of salt until they reach stiff peaks.
7. Gradually add in the caster sugar whisking between additions.Β The mixture should be stiff and glossy.
8. Pour the lemon mixture onto the biscuit base.
9. Spoon or pipe the meringue onto the filing.
10. Bake for 30 minutes or until the filling is set and the meringue
